Payday is split into a stealth and a wave survival type gameplay.

The stealth side uses cones of vision, stealth ratings (basically how much you stand out and how fast they get suspicious) and security cameras. Even lasers in some levels. The stealth game only allows 2-3 pagers to be answered after you dispatched someone silently before the security raises the alarm. All missions have more enemies than pagers you can answer.
The point of the stealth game is to avoid contact for too long and to not kill unless absolutely necessary (eg. a guy standing at a location that you can't pass without him seeing you, or if they have spotted you and are about to call it in). It's an interesting challenge and and has good depth.

Then there is the loud part of the game which is wave survival of sorts while trying to complete an objective. The objectives depend on the mission. Some involve breaking open vaults, others involve finding items of value to bag up and move out, for example. Three heists now involve a meth cooking mini game where you have to add ingredients at the right time while enemies attack your position.
The weapons are projectile based kind of like battlefield. However the cone of fire is quite large on full auto so you are better off with semi auto.
Payday is a game of headshots because the enemies are too much of a bullet sponge otherwise. There are only three ways of reloading ammo; first off ammo packs with are placed on the ground by teammates or are placed there for the mission (these have a limited amount of ammo so run out after about 4-5 refills by the team). Secondly, you can pick up ammo off dead enemies (1-2 bullets per drop). The last way to refill ammo is to be captured, leaving your team a man down until you timer runs out. After a while sometimes you can be traded for a hostage if your team has one to cut your time out short.
Ammo efficiency is a big part as you have 70-150 rounds for your weapon and even less for the most powerful ones. They generally use, more damage, less total ammo. There are some weapons with a lot more ammo but they are much less accurate so more bullets are wasted.
To explain how it is like wave survival, the enemies attack strongly in "assaults" where they continuously spawn. It will eventually pass at they will stop spawning for a few minutes. There will still be enemies on the map that will attack you if they see you but they become less aggressive outside of an assault.
The enemies then are split into regulars (which scale up to higher health and damage dealing on higher difficulties) and specials. Specials include; one with a bulletproof shield, a taser with a stun, a stealth one which has a one hit melee knockdown and the dozer which is a slow character in very tough armor with a powerful gun (usually shotgun or lmg).
If you run out of health you are knocked down and go into a "last stand" position where you have limited aiming and a small bit of health to defend yourself as you bleedout. If you are injured too much you can no longer fight. A teammate must revive you before 30 secs or you are out of the mission for a few minutes. you can only be knocked down a certain number of times before you automatically are out of the mission.

Finally there are character classes which you can unlock skills in as you level up from missions. These allow more health, armour (regenerating health), damage increases and special skills

I think that roughly covers the basics.

I've thought about PS2 here and there, then I think about what drove me away, and I just can't come back to that..

As for WoW... I had over a year and a half played on my Warrior... I can't, I just can't...
